Puff pastry is one of the most complex and rewarding techniques in pastry making.

Lamination Process

Lamination consists of incorporating butter in thin layers within the dough. Each "turn" creates multiple layers that, when baked, separate creating the characteristic flaky texture.

Single and Double Turns

A classic puff pastry takes 6 turns (combination of single and double turns), resulting in hundreds of microscopic layers. Between each turn, the dough must rest in the cold.

Professional Secrets

  • Temperature: Dough and butter must be at the same temperature
  • Rest: Essential to relax the gluten
  • Quality: High fat content butter (minimum 82%)
  • Speed: Work quickly so the butter doesn't melt
